The Duchy of Aquitaine was founded in the 7th century. It was a military command district entrusted to members of the aristocracy (a duke or military chief), to defend the territory of the
kingdom of Aquitaine. It was at the same time that Christianity developed in the Bordeaux region and winegrowers sought protection from the saints . . . As for Saint Vincent, he is the patron
saint of winegrowers. Legend has it that Saint Vincent was chosen because the first syllable of his name is none other than “vin”, the French word for wine. Saint Vincent’s day is 22 January, the traditional day for the start of pruning the vines.
Location
Bordeaux is the largest vineyard for appellation wines in the whole of France. Situated in the South West near the Atlantic, it is crossed by the rivers Garonne and Dordogne and enjoys a temperate maritime climate. The richness, the quality and the diversity of its wines derive from the particular character of the terroirs, the experience of the winegrowers and the art of blending. The tide, which flows up both of the region's rivers, brings very specific characteristics to the wines. With its huge size, Bordeaux reds offer an infinite palette of flavours and combine their qualities in myriad different ways. The vines are located in the area called entre-deux-mers, in between the Garonne and the Dordogne rivers. This region is rather famous for merlot grape. The soils is mainly of clay-limestone with asteries (small fossiled starfishes in limestones).
Winemaking
Destemming and crushing of the grapes. Alcoholic fermentation at controlled temperature using selected yeasts, with around 2 weeks on skins to provide a supple wine. Ageing in stainless-steel and concrete tanks.

Tasting
Elegant vivid red colour of good intensity. The nose offers a bouquet of fresh berries (blackcurrant, cherry) and lightly toasted notes. It is generous and harmonious on the palate with tannins nicely smoothed out. The finish is long and well-structured. In retro-olfaction we find fruity aromas mixed with woody notes.
Food pairings
Serve at between 16 and 18°C. Can be enjoyed throughout the meal.
