Château La Tour Olivier is located in the heart of the hillsides on the right bank of the Tarn, between Cordes and Gaillac. The best of a terroir preserved through organic farming that respects the soil, the vines, nature and people. The olive tree, a symbol of purity and longevity, has always given its name to plots of land. In this way, it expresses the desire to etch the young vineyard of La Tour Olivier in the long term and in the finest pages of tomorrow's viticultural history.
Location
Gaillac is an AOC wine from the South-West of France. It covers 9,000 hectares, 4,000 of which are AOC. The vineyard is divided into 3 slopes with different geological characteristics: the terraces on the left bank, made up of gravelly soils; the south-facing hillsides on the right bank, with clay-limestone soils; and the plateau overlooking the deep valley of the Vère, made up of white limestone and stony soils. The distinctive features of Gaillac red wines are their deep colour, powerful nose and notes of red fruit and spices, produced from a variety of grape varieties: Syrah, Gamay, Braucol, Cabernet Sauvignon and Merlot.

Taste profile
Rouge puissant boisé
Tasting
A brilliant red colour. The Duras is in the majority, giving finesse and aromas of spice and pepper. The Braucol adds structure and body, with notes of blackcurrant that are the hallmark of a true Gaillac. On the palate, the attack is fine with racy tannins.
Food pairings
Serve at room temperature. Perfect with south-western dishes such as cassoulet and aligot.
